Ok I have to start with a disclaimer about this recipe, these aren’t the healthiest of tiffins but boy are they tasty! They also might not have that glossy shine and are pretty crumbly (not selling these here!) but they are so moreish, dangerously moreish in fact!
Another perk is, they are so easy to make, you can change up the recipe (use different types of chocolate depending if you like your tiffins sweeter or a little more bitter) and if you’re eating too many, you can store them in the freezer! Pack them in and save them for that rainy day, perfect! Speaking of rain we finally had some this week which I quite enjoyed. I love the sun and have definitely been enjoying this pre summer weather but there’s something super comforting about being snuggled up at home when there’s a storm outside. I took advantage of it, threw the apron on and made these.
I used golden syrup, butter and melted chocolate to bind the ingredients together however I think I might experiment next time with maple syrup or agave and will let you know how I get on! I did attempt to make these once without the butter, thinking I know how I’ll make these healthier, take away the butter but although I ended up with a tasty mixture, it did not stick at all! Thankfully I wasn’t giving them as a present that time as it would have been a bag of crumbs! Crumbs in a bag with a bow wrapped around, Happy Birthday! Thankfully these ones turned out alright and I’m looking forward to experimenting some more.
These tiffins also bring back fond memories for me as they remind me of my time working at the most incredible ranch in Ashcroft, Canada. I would spend my days in the kitchen, two afternoons/evenings a week riding horses, and one night a week drinking good ol’ Cariboo and dancing the night away in the amazing barn looking bar. The night before I left I had the kitchen to myself, so I blasted out some tunes and made these to give to everyone before I left. No fancy bow this time, just some tupperware, love and happy memories.
Ingredients
250g digestive biscuits
200g assorted nuts and dried fruit
20 chocolate fingers (or however many you like, I used most of the box this time round)
200g good quality milk chocolate (I used Green and Blacks and Lindt)
150g good quality dark chocolate (I used Green and Blacks and Lindt)
1 tbsp butter
140ml golden syrup
Instructions
1. Butter and line a 20cm square tin with non-stick baking parchment or cling film.
2. Break the biscuits and chocolate fingers up roughly, place in a plastic bag and mash with a rolling pin.
3. Place in a big bowl with the fruit and nuts and mix together.
4. Melt the chocolate, butter and golden syrup in a bowl set over a pan of simmering water, stirring occasionally until smooth then pour over the biscuit and nut mixture.
5. Cover the biscuit mixture completely then pour the mixture into the tin and flatten down. Chill for at least 2 hrs or overnight before cutting into squares.
