Energy Balls

Happy March everyone! I can’t believe it’s March already, this year is just flying by! I also can’t believe it’s almost a year since lockdown but feeling thankful for the sunshine, the news of a road map to hopefully meeting up with friends and family again and just Spring coming in to view, hello beer garden!  

I’ve got lots of new recipes I want to get making but this week’s one is a simple, healthy and energy boost, nut energy ball recipe.

You have to admit, energy balls are just the perfect snack and I love that they are so quick to make and there are so many varieties too. I was making my peanut butter and chocolate ones a bit often and therefore fancied trying a new recipe gave these a go.

Using less chocolate, in fact just a tbsp of cocoa powder and only 2 tbsp of peanut butter, these energy balls are still sweet and delicious and get their extra sweetness from being coated in desiccated coconut. Whipped up in just 10 mins, they’re the perfect go to snack, whether that’s for your 3pm pick me up or for craving something sweet after dinner. 

Energy Bites

Total time: 10 mins 

Serves: Approx 16 balls

Ingredients

150g Walnuts

1 tbsp ground flaxseed 

1 tbsp cocoa powder

1 tbsp maple syrup

2 tbsp peanut butter

50g desiccated coconut

Instructions

  1. Put walnts in a food processor and blitz until broken up and crumbly. Add flaxseeds, cocoa powder, maple syrup and peanut butter and blitz everything together until all mixed.
  2. Shape mixture into small sized balls and roll in desiccated coconut to coat. Put in the fridge to firm for 30 mins, then eat whenever you fancy a little energy treat! 

Mix it up by adding raisins, changing peanut butter to any other nut butter or swopping nuts to pecans. 

Can be stored in the freezer or will keep in the fridge for up to 6 days.
